Why is it harder to keep off weight that was lost quickly as opposed to slowly and gradually?

Because losing large amounts of weight at once was probably done in an unhealthy manner.Thus your body is malnourished so it handles food differently, as opposed to a properly nourished body that lost weight in a healthy manner.
